We are looking for a skilled sushi chef who can prepare sushi dishes while following food safety regulations and restaurant standards. Your responsibilities will include making traditional Japanese sushi rice, cutting and filleting different types of fish, and ordering supplies as needed. You should also be able to accommodate customer preferences and food allergies.

To be successful as a sushi chef, you must use high-quality ingredients in your dishes. You should also be able to work well under pressure and maintain restaurant standards during busy times.

Job Duties and Responsibilities

  • Expertly cut, slice, and fillet various kinds of fish.
  • Check the quality of fruits, vegetables, and fish and report to the Executive Chef if they do not meet standards.
  • Prepare different types of sushi dishes according to guidelines for quality, portion size, presentation, and food safety.
  • Keep a clean work area to prevent food contamination.
  • Regularly take inventory of food supplies and other products.
  • Report any issues with kitchen equipment to the manager.
  • Sterilize all utensils, instruments, and equipment used for sushi preparation before every use.
  • Communicate with wait staff to fulfill special requests and accommodate food allergies.

Requirements and Qualifications

  • High school diploma or equivalent.
  • Preferred: Associates degree in culinary arts or American Culinary Federation (ACF) certification.
  • Proven experience working in upscale sushi restaurants.
  • Valid food handler's license.
  • Knowledge of food safety regulations.
  • Ability to work under pressure.
